Rosemany And Orange Christmas Duck In The Instant Pot

Are you undecided what to cook for this years Christmas dinner? Why don’t you try my absolute favourite Christmas meal Duck. I love it with all the trimmings and it always makes me feel so festive. But Duck can be tricky to make as it can be tough. I decided to try make a whole duck in my Instant Pot and I love how it came out!

My duck just fit in to my 6l Instant pot. It was 2.3kg so just bare that in mind when out shopping for your duck.

I ended up making duck with a beautiful orange sauce, whole roasted garlic, roast potatoes, 3 colour roasted carrots as well as cooked red cabbage. I t was delicious.

Duck Recipe

Ingredients

1 whole duck

2 oranges

rosemany

butter

1 and a half cup chicken stock (I used home made but you can also use shop bought).

salt

1 ts cornflour

Turn the Instant Pot onto saute and add 2 ts butter to the pot. Salt both sides of your whole duck and add quarter oranges and rosemary to the ducks cavity and saute on both sides until golden. Add 1 and a half cups of chicken stock to the pot plus two quartered oranges. Pressure cook on high for 25 mins and then do a slow release. Once done pop under the grill for a few minutes until crisp. while you are doing that saute the left over stock and oranges and add 1 ts corn flour. Stir until it thickens up into a beautiful gravy for the sauce.

The duck was so succulent and flavourful and everyone had seconds.

    It sounds delicious!!! Do you have a recipe for doing it in the normal oven as I don’t have an Instant Pot??

      Hi Pam! It would need to cook for 2 and a half hours in the oven at 180 and then just make the sauce in the pan on top of the stove after if you have a gas oven otherwise I would decant the sauce into a pot and do it that way.
