Banana Bread Recipe with EMIRATES

Banana Bread Recipe with EMIRATES

Elijah just loves baking. When he said to me that he feels so loved when we bake together my heart melted. He also likes cooking but baking sweet treats is his favourite.

Because we have been home so long without playdates and still social distancing etc I have been thinking up new ways to entertain him without resoting to watching TV. So far baking is his favorite activity. Who knows maybe I have a little pastry chef in the making. Luckily Emirates, the family-friendly airline has launched a special activities page on its website that is filled with fun, exciting and educational activities for the whole family to enjoy.

Kids can learn to bake a tasty treat with a yummy banana cake recipe or go on an adventure with the animals in a series of videos for children. We decided to bake the banana cake but make it into muffins instead (at least then I can control Elijahs portions as lockdown life has gotten us both eating too much!)

Parents and kids can also download and print out a 16-page Fly with Me Animals colouring book to get acquainted with Lewis the Lion, Peek U the Panda, Ernie the Penguin, Savannah the Elephant, Brett the Bear, Mia the Manta Ray and ChaoChao the alligator. We have downloaded them and it is such a fun, educational resource.

You can also connect with family and friends by sending a special message to those near and far, using one of the easily downloadable postcards or keep your most treasured snaps in a downloadable photo frame featuring the much-loved animals. We are doing that next to send some to all the grandparents missing Elijah.

And now on to the BEST BANANA CAKE RECIPE.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter
  • ¾ cup brown sugar
  • 2 eggs, beaten
  • 2 ⅓ cups mashed overripe bananas

  • Step 1

Preheat oven to 175 degrees C. Lightly grease a 9×5 inch loaf pan or put muffin cases into a muffin pan.

  • Step 2

In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan or muffin cases.

  • Step 3

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Please let me know if you make some as they really are the most delicious.

Thanks Emirates for the inspiration.
